Here is the part most reviews miss. The number on a flat iron's dial is not the temperature of its plates.
When a cold section of hair meets a hot plate, the plate loses heat into it and its temperature drops. The heater compensates, and on a slow control loop it overshoots on the way back up. Two published details matter. The wishbone hinge keeps the plates parallel under pressure rather than letting them splay from the far end, which is what produces even contact along the whole plate instead of gripping hardest at the hinge. And the round barrel means the same tool bends a curl or a wave rather than only flattening.
